Ginger Biscuits

These biscuits are so delicious and chewy. I took the recipe from Baking Mad and altered it a bit because I didn't have any crystallised ginger.

8oz Self Raising Flour
1tsp Bicarbonate Of Soda
2tsp Ground Ginger
4 1/2oz Butter
3 1/2oz Light Muscovado Sugar
3 1/2oz Golden Syrup

1. Set oven to gas mark 4.
2. Mix dry ingredients and rub in butter.
3. Mix in syrup until a dough forms.
4. Roll into balls and flatten on a baking tray lined with grease proof paper. *
5. Bake for 12-13 minutes.

*Note leave lots of space between them they expand a lot(see below). Mines came out as one massive biscuit and I had to cut it into many bits. They aren't solid when they come out the oven, they solidify when cooling.
