Lemon Biscuits

 Another recipe post, this one's for lemon biscuits. I took this recipe from Baking Mad and altered the method a bit.

2oz Unsalted Butter
0.5 tsp of Vanilla Essence
4&1/2 oz Light Muscovado Sugar
1 Egg
Zest of 1 Lemon
6oz Plain Flour 
0.5 tsp Baking Powder
Pinch of Salt

1. Heat oven to gas mark 4.
2. Cream sugar and butter.
3. Add egg and vanilla essence.
4. Add lemon zest, baking powder and salt.
5. Sieve in flour.
6. Roll into balls and flatten on a tray.
7. Bake for 20 minutes or until golden brown.
8. Enjoy.
