Recipe: Jaffa Cakes

It's been far too long since I've shared a recipe with you all so I'm going to share a recipe for jaffacakes I found on Narcissism Is Necessary. These were so delicious so thank you to Kimerbly! I'm in no way trying to copy this recipe and claim it as my own, I just loved the recipe so much I wanted to share it.



2 eggs
50g of Caster Sugar
50g of plain flour

1 packet of orange jelly
1 tablespoon of marmalade
Boiling water
200g of dark chocolate


1. Mix up your jelly according to your instructions and then add a tablespoon of Dundee marmalade(my gran insists on this, she doesn't even like marmalade, it's a heritage thing). Mix until dissolved.
2. Get a large, shallow tray and pour your jelly mixture into it, you want it to be about half a cm thick. Leave to set.
3. Beat sugar and eggs in a bowl over some hot water until pale and fluffy. Them mix in the flour.
4. Pour into greased muffin tins or use muffin cases.
5. Bake at 180C for 10 minutes.
6. Remove the cakes from the tin or peel off the muffin cases.
7. Use a circular cookie cutter to cut out the jelly and place the jelly discs in the centre of the cakes.
9. Melt the chocolate over hot water and spoon onto the cakes. I'd recommend doing this twice as the heat melts the jelly and makes the chocolate slide off.
10. Enjoy.

I honestly can't explain how delicious these are. I made these to take to a gathering with people from my guitar class during the summer and they all agreed they were amazing. Not to blow my own trumpet or anything!
