The April Edit

Woweee April has been a busy month. With a visit to Boston to visit Leda and my mum/sister visiting for 10 days, the month flew by. The weather has finally brightened up a little bit which has given me that little burst of energy that I really needed to get through a busy month. One thing, that I didn't realise is that the US gets less daylight hours than the UK during the summer so if the days are really bright and sunny, that helps make up the difference. It was so nice having my family here to visit. Taking them to New York was fun of course but I really enjoyed showing them around Stamford. Showing them where I go grocery shopping, our favourite restaurants, them meeting my friends etc. The 10 days flew by and whilst I'm sad to see them go, I'm also ready to power through my remaining 7 weeks in the US.


What I've Been Reading

My favourite books of the month were Eat Up! by Ruby Tandoh and Little Fires Everywhere by Celeste Ng. In Eat Up, Ruby Tandoh explores our relationship with food whilst adding in some beautifully descriptive pieces and scrummy recipes. In Little Fires Everywhere, we go back in time and follow two families in the events that lead to a house burning down. 

Both books, in their own right, were gripping, unique and addictive. I'd fully recommend! 

Honestly, with how busy my month has been I haven't really kept up to date on any of the blogs that I read so I don't have any great list of posts to recommend in this department. Apart from this post by Jasmin called 'I Want to do EVERYTHING but Also Spend Time on the Couch' which really summarised a lot of things I also feel. 

What I've Been Watching

Like most people, my Netflix favourite of the month was Queer Eye, a show in which 5 gay men give lifestyle makeovers to straight men. I wasn't sure that I'd like it at first but I really, really enjoyed it. I watched all the episodes in 2 days and then made my mum and sister watch it too when they came to visit. 

Another Netflix show I've been watching is The Big Family Cooking Showdown which is an old BBC show that was recently added to American Netflix (it may be on UK Netflix too, I'm not sure). I love watching cooking shows so this fun competitive show where different families from around the UK compete to show who is the best family of cooks? LOVE IT. Oh and GBBO winner Nadiya Hussain is one of the presenters if you need further convincing to watch the show. 

The only movie I've watched this month was Avengers: Infinity War. It was amazing and very unlike any other superhero movie I've seen before. I'm not super up to date with the Marvel movie franchise but I knew who most of the characters were. And it was nice to see a little bit of Edinburgh in there too. 

What I've Been Baking

Again, with it being a busy month I haven't had much time for baking. But I have found some new dinner recipes that I've really been enjoying. 

First of all, this sweet potato gnocchi recipe is AMAZING. I would have shied away from making gnocchi before because I always think that I'm a terrible cook but this is so easy and so delicious. Hands down the best thing I've ever cooked. After I posted a picture to my Instagram stories, a friend of mine also made it and she also said that it was the best thing that she's ever cooked too. So trust me on this one, you just have to try it. 

I've also been making little chicken and pesto pastry parcels which are super easy and based on a Jamie Oliver recipe. I just buy premade puff pastry and pesto. Then I bash a chicken breast until it's all the one thickness and then spread some pesto on top. After that, I wrap it in pastry and cook according to the pastry instructions. Yum.

What's Next?

May is my last full month in the US and whilst I'm looking forward to getting the hell out of here, I'm going to make the most of it. I have to finish writing a pretty big report for uni which I'm not looking forward to but I want to get that done and dusted whilst also allowing myself time to do all the things in NYC that I want to do just haven't gotten around to doing yet. There's a public holiday in the US at the end of May which means a 3 day weekend which also coincides with when one of my friends from Scotland is visiting so I'm really looking forward to that!
